	<title>Nitrite and Nitrate Residue in Non-Heat Treated Meat Products Marketed in East Azerbaijan Province</title>

However, the use of these salts accelerates nitrosamine production and increases the risk of carcinogenesis. Hence, nitrate and nitrite consumption rate should be according to the approved standards.
